Why salt does this and glass does not
A glass or metal holder throws the light outward and stays dark itself. Salt is translucent, so the light has to cross the wall of the piece to reach you, and it picks up everything inside the stone on the way out. Veining, clouded patches and iron staining all read as darker, warmer bands.
Thickness is the whole point. Where the wall is thin the stone glows pale gold and you can sometimes see the flame straight through it. Where it is thick the light turns deep amber and holds.
